Let’s start with some good news…

One of our favorite beach clubs, Nammos Dubai, is helping to feed front-line staff and those in need by providing over 1,000 meals per week during the coronavirus pandemic. Since the beginning of April, the team at Nammos has been coming into work to safely cook and pack food packages along with fresh fruits, drinks and refreshments. These are then hand delivered to health centers and designated frontline caregivers managed by the UAE Food Bank and Dubai Municipality, which hosts people who have lost jobs because of COVID-19.

Cook like a pro

Long considered a bastion of gastronomic excellence, Le Bristol Paris holds four Michelin stars between two of its restaurants. Overseeing both is chef Eric Frechon, who here shares the secret of his naughty-but-nice hazelnut spread madeleines.

Ingredients
1. 1 small pot of hazelnut spread
2. 35ml milk
3. 100g sugar
4. 1 tsp vanilla extract
5. 125g flour
6. 125g melted butter
7. 2 small eggs
8. packet yeast
9. 1 tbsp butter (to grease the mould)
10. 1 tbsp flour (to dust the mould)

Method:
1. Melt the butter over a low heat
2. Grease the madeleine mould with melted butter and dust with flour
3. Preheat oven to 210°C/410°F
4. Beat the eggs in a small bowl
5. In a mixing bowl, add eggs, sugar, milk and vanilla extract
6. Add melted butter, flour and yeast and stir until combined
7. Add mixture to madeleine mould until half full
8. Add a dollop of hazelnut spread to each madeleine and top with the remaining mixture until full
9. Bake for 10 minutes in the oven until perfectly golden.
